I cannot recommend a guided group tour, but our company has an office in Israel and we recommend a private guide that many of our employees have used. He gets rave reviews.

You could choose your own accommodations and coordinate with him or any other private guide to assemble an itinerary that suits you, and it may not even be any more expensive than a group tour.
As I understand it, all guides in Israel must be trained, pass a test and be registered. We had four days with a different guide in 2018 and it was invaluable. Amazing country, probably my favorite place I've ever visited.
