I'm staying July 2-9 at a 5 star hotel. My. Budget is approx $100 a day I'm not the type to lay around the pool. I like day hikes
Should we rent a car?

Walk the levadas. Public transport can get you around the island, but yes a rental for sure for part of your trip.
