I booked at the Hotel Elch in Nuremburg for a couple of nights near Christmas. The hotel is over 500 years old and is centrally loacted. I found it thru RS Germany guide. (hotel-elch.com) Look for the little Union Jack in the upper right corner to change to English. I made the reservation by email. Easy.
i stayed at Motel One (http://www.motel-one.com/uk/index.html) and I really liked it.
We stayed at the Hotel Victoria last summer. It was great - the first building on the left as you leave the train station (no train noise, there's a long ramp). Modern interior, right on the pedestrian walk downtown (1/4 mile to the main square). Great included breakfast. Nor was it expensive (it's in Rick's book).
We stay at the Hotel Victoria each time we visit this wonderful city. It is convenient to the train station as well as having close parking in a very nice garage if you are driving. It is within walking distance of the old town. The folks who work at the hotel are most helpful and very accomodating. They speak many languages including fluent English. The price is right as well. Castle Veldenstein...medieval castle in good condition about 20-30 minutes by train from Nuremburg. It's located right on a train stop so easy access. Nice ensuite rooms, breakfast included, super cheap and "it's a castle".
