Horseback Riding-Italy, Germany, Switzerland

Can anybody recommend locations or stables in these countries to do some trail riding-horseback touring?

Obviously this is a very popular activity. It would probably be helpful to know where in these countries you are going to be as I am pretty sure you can find trail riding stables anywhere.
