I will be traveling throughout Europe begining in May. I'm 27 years old and plan on backpacking & staying in Hostels and if all goes well I'd like to spend about 2 years traveling. What do you suggest for healthcare?

2 years traveling in Europe? Are you a citizen of the EU?If not, will you qualify for a visa?
If you're not a citizen of the EU, you'll need to make special arrangements and get visas to stay in Europe for two years.
You can comparison shop for medical insurance at www.insuremytrip.com, although most policies available there are priced with the assumption that you'll only need the medical coverage for time periods of a few weeks up to several months, but not 2 years.

Mos travel insurance companies also offer yearly plans that help you with travel issues, like delays, medical evacuation, etc (in addition to health car benefits) worth taking a look at them. Most are fairly cheap, considering.
Re traveling for two years: check the State Department website for the most recent rules in each country you plan to see, and Google Schengen Visa rules.
Unless you're an EU citizen or have a special visa, most European countries have a 90-180 day limit for tourists, and many of them share that time like the Schengen countries. Good luck with the insurance!
