Anyone have an opinion about the best exchange rate in the Amsterdam airport?

Stephan, you'll get the "best exchange rate" by using an ATM. The fees will be significantly higher if you use any of the Foreign Currency Exchange places.

I would guess there are better than 100 ATMs in Schipol because they seem to be everywhere you look.....Beware the exchange machines posing as ATMs. You can use them like ATMs, but they charge a lot more. The difference is in the name. If it's some variation of Bank or Banc, it's an ATM. If it has EX or EXCHANGE in the name, look for another machine.
