I'm afraid I don't understand this itinerary at all. Seems like you mostly want to spend time on the Adriatic, but you also want to take your son to see Legoland. The problem is you've ended up with a strange mix of activities and a lot of time spent in transit.

It's hard to offer suggestions without knowing whether you've already purchased flights and are locked in. Can you let us know?

This is basically an Adriatic trip, but it's cheaper to fly to Munich with a separate flight to Dubrovnik than to fly straight to Dubrovnik.

Since we fly into Dubrovnik a couple days after landing in Munich I thought Legoland could be a fun side trip since it's not far from Munich.

Does the Croatian part of the trip make sense? We'll have a car pretty much the entire time. Split seems to be the best base for most of the trip/side trips and then we'd work our way back down to Dubrovnik. Since we still have a couple days in Austria before our flight home I thought we'd see Salzburg and Hallstatt.

Thanks for the clarification. I'm not sure how much you're saving by flying into Munich and then from Salzburg to Dubrovnik, adding the cost of the rental car (which you could really get by without if you're spending a week in Split and Dubrovnik and visiting the islands). For me it would have to be a pretty significant savings to justify it. You still didn't say whether you've already purchased those tickets... And you're going to pick up your rental car in Munich and drop it off in Salzburg, then pick up another car in Salzburg and drop it in Munich? I believe the cost of dropping your car in a different country from where you pick it up is significant. Plus Google flights doesn't even show any direct flights between Salzburg and either Split or Dubrovnik? Did you find this to be possible?

When I was in Croatia I only spent half a day in Split, and that was pretty much enough. (I would have liked to have more time so I could have visited the Mestrovic gallery.) I wouldn't want to spend five nights there. I think it would be more enjoyable to spend them on one of the islands.

But I am a different sort of traveler than you (single, no kids), so it's hard for me to advise you based on what I would prefer. Maybe someone else will have better suggestions for you.

Best of luck!

Yes, all of my tickets have been purchased. The flight from Salzburg to Dubrovnik was under $100 roundtrip and my tickets to Munich were under $400 Round Trip. I'm going with a few other people as well so we will split car rental costs.
