I did this 14 years ago, so it is a bit fuzzy, but I believe our bags were checked through to our European destination. 2 hours was plenty of time at Toronto.
Which airport in Canada? Many airports have information about interntional connections on their websites.

I don't know about the way TO Europe, but I flew via Toronto from Europe last summer. This was not planned as I got rerouted after climate activists shut down my departure airport for 4 hours, causing me to miss my connection in Paris. I barely made my flight to Toronto without knowing where my bag was, and then we had a medical emergency on board that caused us to wait about 45 minutes before we could deplane in Toronto. I had to enter Canada, clear immigration, with huge lines, and would have had to recheck my bag had it been with me--but the lovely staff helped me determine that my bag was NOT in Canada. Then I had to run across the airport, go back through security, and figure out which gate I needed. I am a VERY experienced traveler and had a super lovely group of about 100 people allow me skip the line when going back through security and passport toward my flight. I got it all done with some running and some line help in 45 minutes (only to then have the plane ahead of us hit a bird on takeoff and then have a nice further delay while the runway was swept). But the people in Toronto were top to bottom lovely and helpful and got me on my flight so I could get to my grandfather's funeral.
Going TO Europe I would expect to be easier if it is all one reservation; I wouldn't expect you would have to recheck bags and at most would have to go through a passport control or a small security check. I don't know for sure. But the staff (and my fellow passengers) were true to the Canadian stereotype and helped me get it done. I am guessing they would do the same for you. My guess is that you would be fine.
Hi. This can vary by flight, airline, and gate. Just ask airline personal when arriving in Canada. We did this a few years ago in Montreal. We did have to recheck our bags, but it was NOT at the normal bag check outside security. It was inside security, just after we exited the plane. Just picked up our bags and dropped them off on a different belt 50 feet away. Two hours should be plenty. Have a great trip!
We flew to Europe from Palm Springs through Calgary last summer. No need to re-check bags if booked on the same ticket.
