My daughter is studying in Florence this January, and she and I are looking for a one night stop on train route to Paris, where we fly out. Any suggestions?

Most trains between Florence and Paris connect in Milan, and in Zurich. I would choose Zurich. I assume you will have at least one night in Paris before your flight leaves.

You do not need to detour via Zurich. Geneva and Lausanne are also options.
