Hah-I'm enjoying it right now for breakfast! I have a baguette from Panera (as good as I can find around here) and good butter and some clementine marmalade I made myself. It's my last jar and I'll make more this weekend. I used a recipe from David Lebovitz for Seville oranges, and also looked at a few others. Really very easy. No need to process it if you keep it in the fridge. http://www.davidlebovitz.com/2007/02/seville-orange/ If any of you make this-a few tips. The rind will expand a little so you might want to cut it a little smaller than you think you need. A coffee filter worked well to hold the seeds. (You need the seeds for the pectin.) I cooked it one day, let it sit on the stove for a day, and cooked it again. That seemed to soften up the rind more. And you may need to add more sugar than is listed.
