Europe - two sets of 7 days. Where to go?

Hi, I'll be a 22 year old female, travelling to Europe around the end of August until the beginning of October 2016. I have planned two Contiki's - one sailing Turkey (8 days) and the other around general Europe (14 days- visiting France, Monaco, Italy, Vatican City, Austria (in transit), Germany, Netherlands, Belgium (in transit).) I am going to do Spain myself for 9 days, however I am looking for other places to visit. I have two separate weeks to fill. I have been told either Greece or Croatia, however, I really have no idea about this or if so, what to fill the other week with. I am not really a shopper or drinker. I'd rather sightsee/nature walk, eat delicious foods, be immersed in authentic culture and learn as much as I can. Afterwards, I'm going to Canada for 12 months, so the Swiss Alps didn't really phase me. I hope this is enough information to recommend some places!

Also, I've been questioning what kind of technology to take. An Ipad mini or windows surface tablet? What would you recommend - bearing in mind it would be for 14 months worth of travel?

I hope you can help!
Thanks

The nice thing with a Surface is that you can use a true web browser. Most websites work with iPads, but some don't. That being said, I have been traveling with just my iPhone. It's one of the new big iPhone 6 plus versions though.

It really just depends on what things you want to do with your tech over there. If you just want to share and post photos and keep in touch with people, either the iPad or the Surface will be fine. If I were to bring a second device, I would choose any version of the MacBook or a Surface Pro.

Will your extra weeks be after your 14 day Europe tour? On the tour you'll just get a small taste of several areas so you might want to leave some time open in case you decide to go back and spend more time in a place on the tour you really enjoyed. What time of year will your open time be? It's possible that weather may determine what suggestions people give you. I think both Greece and Croatia would give you what you say you desire regarding nature sightseeing, food, and exposure to authentic culture.

Looks like you are doing a lot of the traditional trips, so why not branch out a little. A week can pass fast so i would keep the trip fairly direct and tight. Budapest to Belgrade to Sofia or Belgrade to Sofia to Istanbul or Podgorica to Dubrovnik to Zagreb or Dubrovnik to Zagreb to Ljubljana. Or just a week in Transylvania. Of course i could spend a week in Budapest and go no where else.

I really appreciate all of the replies. I will be there from the end of August to the beginning of October 2016. It will be something like this - week vacant, a week with Contiki in Turkey, a week vacant, the general Europe tour and then 9 days in Spain. It is the two vacant weeks that need to be filled. My heart is set on Spain, I'm not sure where exactly, but just Spain in general; I just have no idea what other places to see or things to do.

As for the technology, I have an Iphone (with a very small memory.) I needed something else. I love to take photos and read, so it would store my books, maps and help me keep in contact with relatives etc and that I would also be able to take some photos on, in places where my camera is too big.

I would suggest you ...
Fly into Athens (3 nts) and then move to Istanbul (4 nts)
Transfer to Bodrum for your 8 day Contiki Turkish Sailing Tour
Fly to Spain for 9 days (??) on your own (Barcelona+Madrid+Seville)
Fly to London for your 14 day Contiki European Highlights
(Leave the Contiki tour in Amsterdam)
Train to Berlin (4 nts) and finish up in Prague (3 nts)

Again, thanks heaps! I really appreciate all of the advice. I wanted to ensure that I have an idea in mind before just going and I definitely have a lot to think about. Because I am going on Contiki, I'm not going to book all of my ideas as I may meet people who know of other places and want to go with them. I know this option is a little more expensive, but if it doesn't work out, I will have my plan b, ready to book - I can't wait. Thanks again, let the countdown begin!
