Europe Itinerary advice: AMS to WAW or reverse?

Hello fellow travelers!

We are in the mist of planning a summer trip to Europe. We have a family wedding in Poland on June 12th. The thought is to take 2.5-3 weeks and travel through Europe, hoping to see Amsterdam, Brussels, Dusseldorf (family lives there), Berlin, Copenhagen (may be a stretch?), Prague and Warsaw.

The plan is to fly from Denver, "open jaw." We're still trying to figure out if we leave at the end of May and start in Amsterdam, working towards Poland...or in reverse fly over around June 8th, starting in either Berlin or Warsaw the work back towards Amsterdam via rail. The wedding is equal distance from both those locations, it's close to the German border.

Flights seem to be cheaper starting with a May departure, vs a June until mid June time length.

My questions are: Which route would you suggest? Also, for first time European travelers, does our city line up sound good? We're open to input, and certainly wouldn't mind going off the beaten path a bit outside the larger cities.

Ideally we'll find flights under $1000! Thank you for any suggestions!

I don't think it makes a lot of difference but my preference would be the early start in May simply because you are a little ahead of the big tourists season. When we were associated with the local school district we always tried to go the last week of May so that we were home by mid-June. A couple years were forced to go mid-June through early July. We found a big difference in crowds. Good luck.
