Was able to check in online and get boarding passes for easy jet Paris to Pisa without being prompted for passport information for all 4 of us? Is this normal/expected? Easy jet customer service difficult to reach.
Yes. it's normal. Your passport will be checked at the airport though.
You are traveling between two countries within the Schengen visa zone, so there are typically no border/immigration checks between those countries, regardless of mode of transportation. See also https://www.ricksteves.com/travel-tips/trip-planning/travel-documents.

I don't recall ever having to provide Passport details when checking-in for an easyJet flight, and that included a trip last September from London to Geneva. I believe my Passport and boarding pass were checked at the luggage station when I dropped off my checked bag.
just an aside but please check the rules for hand luggage with easyjet, they are very strict on the size and number of carry on bage,weight is no problem as long as you can lift it but it is one bag only and it is strictly enforced, no purse, or computer bag though a small bag from the airport shops will be allowed.
I use Easyjet a lot and they are an excellent low cost carrier with very good on time performances but many folk get caught out with the one bag rule.
A bit of further information to add to that posted by Uncle Gus. If you pay for Speedy Boarding or some of the other premium services, the carry-on luggage rules are somewhat more "generous". However, I can confirm that for the cheapest fares, they ARE very strict with the "one bag" rule.
