How easy is it to find distilled water for my husband's CPAP machine (we will only be in Western Europe)? Any other kind of water will clog up the humidifier.

I don't try to find distilled water there. I take a plug-in heating coil and boil enough tap water (cool it before pouring it into the CPAP humidifier)to fill. I either use one of the folding heat-resistance cups or buy a souvenir coffee cup and use that. Be sure the heating coil will operate on 230-240 volts. Mine works on 110 or 240 volts.
