Day Bed on A Night train

What exactly is a "day bed" like on the night train from Munich to Florence?

The German Rail site uses these terms for sleeping accommodations on the Munich-Florence CNL night train: "Day couch" which is a reclining seat; "Couchette" which is compartment with either four or six bunks; and "Sleeper" which is a compartment with either one, two, or three beds. For whatever site you used "day bed" is probably the same as "day couch." IMO, booking a day couch is false economy. You'll sleep better and your luggage will be more secure in a couchette. Couchette compartments are the same size. The only difference is in how many bunks are pulled down. Paying a little more for the extra elbow room in a four-person couchette is well worth it.
