I know that this question has been asked a lot, but I am wondering..when you carry colour copies of your passport around with you as opposed to your real one, are they accepted at places, when required?
Typically no. The only time you would really need to show your passport anyways is when checking into a hotel, getting a railpass validated, taking a flight, etc. When doing this, you should have your real passport with you anyways.
A copy of a passport works best to help get a replacement should your actual passport get stolen.
If you are looking for a document that can be used to confirm your date of birth for something like an age-related discount at museums, then a photocopy might work but to be safe I would recommend that you take a driver's license as that would be accepted.

You can also scan a copy of all your documents and email it to yourself. If you ever lose them, a visit to a nearby computer can access the documents again for you.
