I seem to remember from the last time I went to Europe that it was important to have 2 copies of my passport. But I cannot for the life of me remember why or where to put them!!!

The reason you should make copies is that in case you passport is lost or stolen, having the copy makes getting a replacement much easier. You should always keep the copies and your passport separately so the they don't go missing at the same time.
If you are traveling with someone else swap info. We also exchange credit card numbers and phone numbers to cancel them and carry then in our luggage.
I scanned a copy of my passport and then e-mailed it myself. Now in order to get a copy I can simply access my e-mail account and print it off.
I scan the copy and put it on my memory stick. I also have the actually passport application I filled out soft copy on there as well.
Also, don't forget two extra passport photos. This will expedite the replacement passport a lot. And much like carrying an umbrella to prevent rain, having all this back-up should ensure that you never have to replace a lost or stolen passport. :-)
Hope, I too email my yahoo account a copy of my passport. Internet cafes are easy to get access to if you need to get a copy.
