We are visiting India in February for a family wedding. After that we have plans for a cruise starting in Las Palmas and we have about 8 days in between. We've looked at Istanbul, Lisbon and of course Las Palmas. Based on time constraints we can only do two of them. Note we could simply arrive in Las Palmas on time to board the cruise ship. Which two would be best for a visit in February? We are infrequent travellers coming from Vancouver Island, BC, Canada.

Do NOT do that. Never arrive the day of a cruise. Allow yourself one day to account for travel SNAFUs and also just to recover from a flight.
Istanbul, Lisbon and of course Las Palmas
If it is a R/T cruise from Las Palmas (Canary Islands), I would absolutely look into spending a chunk of your time exploring the island (islands if possible). Then it's just Istanbul or Lisbon - BOTH winners. I think Lisbon would be the naturally "closer" option, but not knowing your cruise itinerary, you may be already taking in a bunch ow Western Med and Portugal ports, so Istanbul would be a nice change.
Istanbul is wonderful, we spend five days there prior to a cruise of the Black Sea in 2014.
