In early October the listed bed and breakfasts are full - anyone have ideas on other recommendations to try?
Did you try Hotel Egmond? (I don't know what the listed B&Bs are.)
I stayed at Hotel Heritage Sept 2010 and it was amazing. It was our splurge hotel on the trip though, so it's not cheap. Excellent location, fantastic staff, clean room.
I'll give a second nod to Hotel Patritius. We stayed there for two nights last September and agree with the above reply. The owners are very congenial, the rooms are spacious, but quaint, and the breakfast was enjoyable. We used their washer and dryer for a small fee to do our laundry.
We stayed at Hotel Patritius (http://www.hotelpatritius.be/). We found the people there very helpful ad the accommodation to be most satisfactory. Good breakfast in the morning was included.
I'm a big fan of Trip Advisor for hotel recommendations as well as reservations. Last year I reserved a room in Bruges through TA and ended up getting upgraded to a 4 star superior hotel for same amount of money. I've used TA in Paris, Rome, Glasgow, Edinburgh and London with no disappointments. In addition to hotels, they also list B&Bs. tripadvisor.com
We loved the Hotel Jan Brito-best breakfast in Europe! Mike

Thanks to all for the suggestions. We are now emailing to determine availability.
Very surprised that the hotels and bed and breakfasts are scace in October - thought this would be a low occupancy time. We are finding the same full status in Paris.
