what time is your Eurostar? What day of the week?
How much luggage do you have?
Fastest will be a fast Southern train with only a handful of stops to Victoria, then a Victoria Line Underground (Tube) train to Kings Cross St Pancras and a short walk to the Eurostar check in. Faster, a little more complicated, involves stairs at Victoria, and you need a tube ticket or Oyster card.
Slower but with no changes will be a Thameslink train which you join at Brighton and don't leave until you arrive at St Pancras International. No stairs at either end but more stops, slower, but much easier with plenty of luggage.
A taxi may be expensive? No question about that one. Very expensive. And likely no faster, and if there is traffic, much slower.
a taxi would be an awful choice - costly and a lengthy journey - take a direct train to St Pancras in 90 minutes

Our Eurostar train on Saturday, September 10th is at 12:30 pm. we will only have 1 piece of luggage each plus a carry-on bag.
Eurostar requires a security procedure so consult its website to see how long before departure you must check in.
There are direct trains from Brighton direct to St. Pancras that take about 90 minutes. Leave at 9:35 from the main train station in Brighton and arrive at 11:03 which gives you time to get through security and customs. Booked in advance the price is £ 10.80. There are about 2 trains per hour so you have the choice of an earlier train.
