My wife and I have several hotels in Portugal and France booked in Orbitz and she's used her USA phone number as the contact.
We were planning to use SIM cards in our phones while in Europe, which means we need a better way for people to reach us if necessary.

I cannot think of a time when I had a hotel call me before my stay. Afterwards, yes, because I forget stuff all the time 😆, but never before.
And I guess you had to give your email address too, so they can reach you that way if they can't get thru on the US number.
So I would not do anything!
After you get your European SIM card installed contact each hotel with your reservation number and your new phone number. You can call or text them.
