Hello! I am traveling into Gatwick Airport in London and have 2 days to get to Interlaken for three days and then back to London for 3 days.
Suggestions for where to go the first 2 days to make travel seem shorter. I was thinking Belgium and I also have friend in Strasbourg.
Any advice on best train schedules?

Check Deutsche Bahn website. They have timetable for all Europe.
I would stop in Paris on my way there, and Strasbourg (via Basel) on the return.
You can have considerably less expensive Eurostar tickets if you buy non changeable tickets several months ahead. If you get them at the last minute they will be very expensive.
The same applies to the TGV from Paris.
If you are already at Gatwick, Easyjet can get you to Basel very cheaply and quickly, but then you miss the scenery on the way.
The best train plan is a plane.
