We'll be in Provence during Bastille Day and would like to spend the day in Arles, but are unsure whether the sights will be open. Can anyone give us a sense of what's open outside of Paris (restaurants, sights, etc.) on July 14?

In the past we haven't been able to answer most questions that ask about closures on a particular holiday, since there are only about 50 of us that answer questions here regularly and the chances that any of us have been to the place you're asking about, on the holiday in question, is slight.
And so, it's best to ask the question of someone very familiar with the local area, such as a resident of Arles or Provence. To have a better chance of finding such a Destination Expert

one suggestion: ask the question as to Arles, don't ask the question about "what's open outside of Paris", that question is too broad.

We wrote to our B&B and asked them what was planned in town (Bayeux) for Bastille day. Turns out they were having the festivities and fireworks on the 13th and not the 14th. So that was good to know. So, try asking your hotel now, what is planned.
