You can see the whole trip on the rail planner of the Deutsche Bahn by selecting »Further options« and at »Intermediate stops« filling in »Koblenz«.
On the page listing the possible connections, select »Show details« to get all the stops and a map of the route.
Can I have the scenic route from Amsterdam to Lucern with only 1 change, not going through Paris, for 10 hours or so?

Köln Hbf is a major junction point. With only one change, ie in Köln, I would suggest that option too.
The best you can do is is 2 changes, one in Duisburg and one in Basel. The single change route bypasses the Rhine Gorge via the high speed track between Bonn and Frankfurt.
