I'd love some thoughts on places to stay in Amsterdam that have been quiet and clean that you would recommend for my son (20 years) and myself. Thanks to you; the tips on other aspects of our trip I've received thus far have been SO helpful to me.
Check out the Owl Hotel (really!) Google it just like that, Owl Hotel Amsterdam. It brings up their website and lots of TripAdvisor comments. The location is ideal.
A great little hotel in a quiet neighborhood: Hotel Aalders ... stayed here last October (with our 21 year old son, on study abroad in Germany). A friendly family owns this clean hotel, with one of the best breakfasts we've had in EU or US. Had a nice discussion (politics, wars, parking) with grandson of original owner … felt like we were staying with a local family.
Thanks Brianna and ESH. I'm looking into if the Owl is quiet and sadly, the Hotel Aalders is booked for our dates. I, too, am with my son (who will turn 21 during our trip) who is studying abroad and living in The Netherlands! We'll keep checking any and all recommendations.
A couple of weeks ago, I stayed at Hotel Estherea. It was a little bit more than I generally like to spend, but the location was excellent ... on the Singel canal, close to Spui. The hotel was very clean. They put me in a canal view room (I had not booked one as they were more expensive). This was my third trip to Amsterdam and this was by far my favorite location.
Last spring we stayed at Boogaard's B and B. It was very clean, quiet, and had fantastic breakfasts. It is a very short walk from the station, located on a quiet street and convenient to all the sights of the historic center. Peter B is a friendly and helpful. We'll be back there on our next trip.
We love the Hotel Fita.
I will give a second nod to the Owl. My family has used this hotel when in Amsterdam for more than 20 years. Last summer we spent two-nights with four of us there. It was its usual quiet, clean, and pleasant, with a great breakfast.

There are many reports recently on Trip Advisor's Amsterdam forum of travelers getting great bargains on 5* and 4* hotels in Amsterdam on PriceLine. I got a room for a Sat night in June for about $75 (incl taxes) at the 4* Nh Amsterdam Centre (their rack rate is 3 or 4 times that). It is right around the corner from the Owl, whose rates are closer to 100 euro.

Lisa, have you tried getting on booking.com or venere.com or tripadvisor.com and putting in the dates of your travel to see what hotels come up? I had a similar problem over Easter and basically had to work from the list of available hotels.
