James, have a look at the website for the Villa Bonelli in Fiesole, in the hills above Florence. We stayed there a lot of years ago and loved it. The No. 7 bus from Florence takes you there, a very pretty 30 minute ride. By the way, since you will have a car, be sure to inform yourselves about the Limited Traffic Zones in Florence (ZTL) so you don't get caught by the cameras and fined.
Since you'll have a car, I would stay on the outskirts of the city because of the high fines for driving close to the city. The Hilton Metropole is easily accessible to the autobahn and has a free shuttle to the city. It makes the trip several times a day. There is also a bus stop at the mall next to the hotel. This hotel also has free parking and rates in early March start at 90 Euros. Have fun on your trip!
