The best travel website for questions on Israel is the Trip Advisor forum.
And the first thing they will tell you is that if you are used to travelling independently in the US and/or Europe, you can do it in Israel too. Then they will offer to help you plan every detail of your trip.
But if you are set on a tour, there are recommendations, reviews and trip reports. You will also be able to get advice on choosing an itinerary.
