I am traveling from Florence on Dolomiti Airlines to the US with a connecting United flight in Munich. I only have 1 hour to make the connecting flight. What is the procedure? Do I have to go through customs or immigration in Munich?
You go through what we call passport control in Munich. If you check the bag it will go all the way to the USA on the connecting flight. It sounds like your United flight is a code share of Lufthansa is that correct? Or did you buy two tickets FLR to MUC and then MUC to whatever city in the USA? The answer to those questions make a difference.

I did not buy separate tickets. I bought through United. The flight to Munich from Florence in Dolomiti airlines and the flight to the US is United.
If you have one ticket and not two separate tickets you have nothing to worry about. They will be responsible for putting you on the next flight to the USA from Munich since they sold you one ticket with a connecting flight. The worse is they will put you in a hotel for a night in Munich or they will have re-arranged your flight for the same day when they see that you would not make the connection when it is their fault. Something similar happen to me in Paris about a week ago except I was in a hotel for two nights; that was the earliest they could get me back to Chicago. But it came with 3 meals a day in a hotel I could not afford myself. Nothing to worry about not unless you have to be back at work and your boss is crazy when people call off but have vacation days.
Munich is a chill airport so I like your chances of making the connection.
I checked the Munich airport web site recently to see if my 1 hour connection would be an issue (it's now a 1 1/2 hour connection, so I'm less concerned). I believe the web site said the average connection time was around 30-35 minutes.
If your plane is on time, one hour may work. Munich is pretty efficient. I worry a little about customs/immigration. Hopefully there isn't a line. I think buying on one ticket is a good bet because it's the airline's responsibility if you don't make it to put you on the next flight. If it's separate tickets, it on you.
