And for 5 nights in Paris?

Do you have a price range? Preferred type of place to stay? Here are my two current favorites:

Aix-en-Provence: https://community.ricksteves.com/travel-forum/france-reviews/a-pleasant-inexpensive-hotel-in-ais-en-provence-but-it-s-not-for-everyone

Paris: https://community.ricksteves.com/travel-forum/france-reviews/hotel-des-grandes-ecoles-paris-1d8357d3-20d0-41f0-baf5-b34800b325b1

Notice that the visit to Aix was 4, almost 5 years ago, so the price will certainly have changed.

I was in Aix in Oct and loved the Hotel des Quatre Dauphins. I didn't try their breakfast, but the room was lovely. My bed was comfy and the bathroom had been updated. The ladies at the front desk were always pleasant and helpful.

Forgot to add, I was in Paris in Sept and stayed at the Hotel Minerve near the Pantheon. My room was really cute and it had a window with a window box containing geraniums with a great view of the streets outside. I also had an English language news station which I appreciated since Charles and Camilla were in town. There were lots of fun restaurants in the neighborhood. I also like the Hotel Diana in the Latin Qtr, but I understand it will be under new ownership.

At the risk of being sanctioned for sharing info from the RS Provence guidebook, I'll tell you that in Aix he recommends the Hotel Cezanne, Hotel Cardinal, Hotel des Quatre Dauphins, Hotel le Concorde, and Hotel des Augustins. Their rates vary, all are reasonably close to the main sightseeing areas. You can google them. I recently stayed at the Adagio Aix-en-Provence Centre, a little farther out but still easily walkable, with a Road Scholar tour. It was fine, with big rooms and kitchenettes, a pleasant courtyard behind, self-service laundry, and good breakfast.

As for Paris, I agree with Jane about the Hotel des Grandes Ecoles. There are many other choices and many other threads here discussing them.

It will help posters to know your price range and what time of year you'll be there. Booking.com is a very useful search tool with good filters and genuine reviews, but it's wisest to book directly on a hotel's website.

We stayed at Hôtel Aquabella in Aix in provence. In Paris we were at Hotel Relais Bosquet. I'd go back to both.

Just back from Paris. Paris France Hotel is great. Staff is wonderful and rooms are charming. In the 3rd and close to 3 metro stations, 6 lines and numerous bus stops. Lots of shops and Enfants market. Highly recommend the hotel.

This afternoon I just finished putting the finishing touches on my trip to Provence in March. I book with booking.com but usually stay in apartments for lengthy stays so don't have a hotel to recommend there.

I had a very pleasant one night stay at Hotel Escaletto in Aix in late September. Comfortable, modern rooms and a great roof deck for watching the sunset. Ten minute walk or so from all the sites. They were very accommodating holding our luggage for us the next day before we continued on to Arles. $180 for a triple room on a Wednesday.
