Reservations in Bavaria & Alsace

Information I've read suggests making dinner reservations at restaurants vs winging it, particularly in the more touristy areas we are visiting, like Rothenburg, Fussen, and Colmar. How far in advance should this be done? We'll be there mid-September.

These days, in popular spots, it always seems necessary to reserve, especially if you are particular.
It is irritating that you can't just roll up any more when you see somewhere you like, but there we are.

I’ve never made reservation in Rothenburg, but then there has never been a restaurant that I absolutely had to eat at.

In Rothenburg, we made reservations for Zur Holl as it was required and I could see why when we were there. It was so good! Many people were turned away that night. Btw it was cash only.

I think you mean "zur Höll". (Could also be correctly written as "zur Hoell".)

well their webpage isn't very encouraging, regardless:

We will reopen our Weinstube Zur Höll on Wednesday 9th May 2021

We went to Zur Hoell at 5:00 pm without a reservation and were seated, but I agree that if you MUST eat there, make a reservation.

We like to eat also. We enjoy going to Delicatessens/Deliatessens to do take out. You will be where these were invented. You can find sandwirches for lunches and picnics. There are also Food Street Markets. We often just brought back food to our room, so we could put our feet up. We did go out to eat, but these tended to be casual. I guess we are not real foodies, but we do save $$$$! I live in an area with salmon and crabs, orchards and vineyards, so I can eat well at home.
