Home kitchen versions of great restaurant dishes -- Toledo style

One of the best chefs in Toledo is posting videos of at-home versions of recipes from his new-cuisine restaurant where they do great things with game meats:

This clip is a dish featuring deer loin poached in vinegar and white wine, served with artichoke hearts and vegetable stew.
Great way to practice your Spanish, too.

And I just used up all the venison loin in my freezer! Darn!

But I'm going to take a look anyway. My Spanish definitely needs brushing up, especially since our church services are all on hold.

Chef Palencia's restaurant there in Toldedo does the best leg of lamb to be found anywhere. The first time I ate it there a few of the kitchen staff were pretending to casually stand near the pass to keep an eye on me when I tasted the first bite. It was one of those moments when the rest of the world disappears and the whole universe is concentrated on your fork :-)
