Dining times during Venice, Florence, Rome in ten days tour

I’ll be on the Rick Steves Venice, Florence, Rome in 10 days tour this April 2025. In planning my free time itinerary I’m wondering about scheduling around meal times, especially dinner , and in particular dinner time on day 4.

I was on this tour two years ago, so it may have changed somewhat but we didn’t have much free time that day. You are on the bus from Venice with a stop midway for restroom and snack break.
Then check in to hotel and the walk with the tour guide around the center of Florence. I know we didn’t plan or do anything on our own that day. However if something not on the tour is super important to you then you can bow out of the dinner. We had plenty of time the next day for touring Pitti Palace, the gardens and a trip up to the overlook.

From our experience pre- Covid, the Italian dinners started later and progressed at a leisurely pace. It was a bit late to be eating by my standards, and it was hard for me to go to bed right after eating.
That being said , the dinner in Florence was a highlight, with a flaming steak presentation.
The late dinners did give one a full afternoon of exploring. The tour generally got us into museums very early, to avoid crowds, then we were free for the day. The exception was seeing the David, which was before closing hours, and that museum was empty, for our particular tour.

You mention the dinners are “late” but what time do you consider late? Thanks.
