Didn't you like the suggestions for hotels in Southampton and what is attracting you to Winchester?

Winchester is fantastic, we loved its wonderful Cathedral and other historic places.
We stayed at the Wykeham Arms
75 Kingsgate Street, Winchester, SO23 9PE,
It was great and walking distance to the city center.

We have 2.5 days to spend before our cruise out of Southampton. We will not have a car, we definitely want to see the Cotswolds. Should we spend any time in London (we are not big city people) or spend the whole time in Cotswolds? Or Winchester (since it's closer to Southampton)? Any help is appreciated.

I also stayed at the Wykeham Arms (in 2018) and enjoyed my stay there.
