I have printed out my EU Health pass digital QR code but not sure what is the best way to add to my phone/watch. Is there a special app or can I just take a picture of it?
A picture will work. Save it to a special album so you can find it easily. We do this with our vaccination cards and passports also.
I have both a physical CDC card and a California QR code. I saved the QR code as a PDF and took pictures of the CDC card. I added both to the native Apple notes app. I believe notes can be pinned to the top of the notes app. This process works well for me. No searching back through all my photos for the right one.

Which country are you going to? Unfortunately, there is not one app that will work for all of Europe.
For Germany, it's the Corona-Warn-App or CovPass or Luca. The first two are open source and recommended if data privacy is important to you.
@Biker Chick: How did you obtain the EU Health Pass? I wasn't aware there was any general way to obtain one from the US. There is a way to get one from the French, if travelling to France only and travellers are having mixed success getting it on time.
Note the QR code available from the CA Dept of Health is not the same thing.
the french pass works as a EU pass.
