I am planning on flying to Turkey, spending a few days in Istanbul, then flying to Athens for a week and returning to Turkey before flying back to USA. I have heard that you must get your passport stamped or it may be difficult to re-enter Turkey. This makes me very nervious

I am currently in Turkey and just did a day trip to a Greek island and back. I had absolutely no problems either way. They did stamp my passport exiting and re entering Turkey.

You need to get your passport stamped when entering and leaving Turkey because it isn't in the Schengen zone. This is routine and is no cause for anxiety.
