We are flying into Kayseri through Istanbul and staying in Goreme. Any suggestions on where to purchase a SIM card in Goreme if we do not have time in the airports?

Turkcell is the major national provider, and they have stores all over. I'd look on google maps for the one closest to your accommodation.

There is Turkcell in Goreme. They will sell you tourist welcome pack which has 25 GB. Just ask them about this package. There are tons of Turkcell stores in Kayseri if you walk around the city too.
