We are travelling to Istanbul with our son. We each will have our Canadian mobile phones with international plans. Do we call each other as normal? 1- area code- 7 digit number?

I would recommend you get WhatsApp. You can call each other directly within the app. You can also text each other, and you can create a group for the three of you to share photos, text the entire group, and even have group phone calls with video.
I believe if you prefer to just use your phones to make calls, what you're saying should work.

I agree that Whats App is the way to go. I had a similar trip to Turkey as you describe with family a year ago and Whats App was definitely useful and easy to use.

how do you store one anothers numbers in your phone -- I presume with something like google contacts - if you don't you should.
Save the in the format +1 - then your number.
Wherever you are in the world, Canada or Turkey, just call the contact

Question - I'm not very familiar with WhatsApp except on my laptop using wifi. I was planning to get an e-SIM rather than using my phone roaming. If I do that, will WhatsApp still work with just wifi on my phone?

parrotmom, using an eSIM, you will always be able to use WhatsApp on your phone, whether you are on WiFi or just connecting through your eSIM data plan.
