I wish to fly into Istanbul then travel to Italy staying near Bologna. I have only a week to do so, but am interested in seeing Eastern Europe and couch surfing along the way. From Italy I plan to take a month and travel through Germany and Holland, but that's a whole other set of questions.

I do not recommend trying to couch surf your way from Istanbul around the Adriatic to Italy in one week. Trains are slow there and the one departing Istanbul starts with a connection in the middle of the night. See www.skyscanner.com for flights from Istanbul to Italy.
