You could try contacting one of the three Tourist Information Offices in Istanbul.

There must be. When I was there last year, there were hundreds of tourists from Arab countries. I'd try tripadvisor's Istanbul forum. There are usually locals on all the TA forums. If you read Arabic, there may even be a version of TA in Arabic where you're likely to get even more info.
