We will be on Princess Cruise in August and we have already been to Euphrates. What else to do for one day?

You could take a taxi into Selcuk, which is a place of some interest. There are some decent restaurants, too. Research and see if it would interest you.

Well, you could shop :-) I've been to Ephesus 4 times and not yet tired of it. The purported site of the Virgin Mary's retirement cottage is nearby (Maryem Ana). The archeology museum at Selcuk is currently closed for renovation.

There's plenty of different beaches all along the coastline by Kusadasi. You can catch a dolmus to visit the ones north and south of the city.
