Can someone tell me if traveling by a car when crossing the border from one country to another Ej : from Brussels to Amsterdam they are requesting a covid vaccinations document on the border ???

There's no doubt this can vary greatly from border to border. Is it the Belgian/Dutch border crossing you're concerned about?
You'll get more useful eyes on this thread if you post in the Netherlands forum or the Belgium forum. This "Trip Reports" forum is for folks to tell us about their past travel experiences.
If you know exactly where you're going to cross the border, it wouldn't hurt to include that information. I see that one suggested route goes past Bergen op Zoom; the other, past Breda.

Driving between Schengen countries (Belgium and the Netherlands) is like driving across different states in America - there are no border posts.

I've crossed the border between France and Spain several times this month and there are no sanitary checks.
I did go from Irun to Hendaye on the surface streets one day and they (the French police) were stopping all vans and delivery trucks. It was obvious they were looking for something, but they did not ask anyone for any documents.
