Eduardo's Organic on the corner of Via del Proconsolo and the South East side of the Duomo is 100% certified Organic and has Vegan options as well.

@Dee, In regular gelato shops the sorbetto is almost always vegan. Yes, I ask every time! I have had wonderful in season fruit sorbetto all over Italy...peach, white peach, pear and Green Apple top the list.
Next time I am in Florence I will try your recommendation!
