I have been to Europe many times over the years; however I never have spent New Year’s Eve anywhere in Europe. Any must do’s on New Year’s Eve that is fun and memorable?
The last 4 years I have passed them in Paris 2014 and 2015 Orvieto, Italy 2016 and Amsterdam 2017. From my perspective there is not really a must do. What is fun and memorable depends on what you like to do out on the town and hopefully your relation to who you happen to be with at the time. My thing is to ring in the New Years in a jazz live music club that is what I love, where there is a count down and a toast at midnight and then dancing til the place closes. Last year I was with my niece who had never been to Amsterdam. The year before that I was with a girlfriend that had never been to Italy and the year before that I rang it in with my 70 year old uncle (who is funny flirting with the women) that had never been out of the country. Those are all unforgettable experiences.
What is a must do on New year's eve in Europe that is not obvious?
Vienna! Waltzing in the street! (And waltz lessons, too.) Crowd included children, grandparents.
I have spent New Years Eve in Stockholm and Prague. Depends on what you are looking for. Stockholm was amazing with fresh snow, lots of lights, fireworks and lively entertainment in Skansen. Needless to say, Prague was very, very busy and they take their celebrating very serious!! Fireworks that seemed to go on throughout to the next day and LOTS of partygoers in the streets. The Christmas markets were still on so that added to the crowds and festivities. Have a great time wherever you decide to go!
One of my Bucket List items is New Year's Eve in Edinburgh, Scotland. Friends did it last year and highly recommended it. I love that city, and have had so much fun during The Fringe in August, so I know that town can throw a party!

I've attended four New Years festivities in Europe, all in the same area of Bavaria. Munich was OK, Nuremburg was better, Rothenburg odT was even better yet. But the best I had was in a very small town of maybe 30 houses when I was with some friends. The whole town was out in the streets dancing and partying in the snow.
Rothenburg has great fireworks on New Years Eve, and they look even better from outside the city.
Prague! Fireworks all over the city all night. Very impressive fireworks over the river and the old district. Best viewed from a hotel room several stories up because it sounds like a war zone outside. The city is very crowded over this holiday, however.
I've spent New Year's Eve in London, Paris (three times) and Rome. My experiences have varied. I've had a fancy dinner followed by a breathless race to the Eiffel Tower at 11:45, hung out in a pub with locals watching the early days of the Spice Girls, and watched fireworks from my flat rental rooftop while listening to people throwing dishes out their windows to welcome in the New Year. Each experience was wonderful and pales in comparison to the ones I have at home (in bed by 10PM).
Wherever you decide to go, if you want to dine out make reservations EARLY. I returned from Scotland last Sunday and already saw signs in restaurants encouraging people to reserve for Hogmanay.
Years ago we split our NYE between Salzburg and Munich. We were staying in Salzburg and took the train to Munich. Had dinner and then a couple of beers at the Hofbrauhaus. We caught a train leaving Munich around 10:00 and pulled into Salzburg just before the midnight fireworks.
