I searched all the "big guys" of Champagne and what they offered, as well as looking at some smaller producers. Big Guys offered very pro-forma information plus three "tastings," usually lasting an hour. Smaller producers weren't offering at all. I researched using the Riem's Tourism website, and searching each of the smaller producer's I'd had.
I stumbled upon Champagne Marie Senellart, a small producer who also offers a beautiful b&b through Air B&B. Sophie Senellart is the founder/co-owner, and for 140 Euro each we had a three hour tour over two vineyards, a tour of the cave and the local cooperative, a very good education about the Cooperative that works to produce the champagne and sell it, as well as an hour tasting and discussion of several of the brand's champagnes.
We were so happy with this. Website is champagnemariesenellart.fr, under "Un patrimoine." One note: we did have to send the funds via bank transfer beforehand. But it was well worth it!
