My wife and I are going on the Scandinavian tour May/June 2019. The tour ends in Bergen on a Saturday and was wondering if it is worth staying on in Bergen (ie is there more to see there then one would have done already) for another day or as we have to fly home via Copenhagen to Toronto would be better to have a extra day there

If the tour has just one night in Bergen, it is worth staying a second for sure.

On the Scandinavia tour you'll already have had several days in Copenhagen, but not much time in Bergen, which I think is a much more interesting town, although smaller.
I took this tour in 2017. I would go back to Copenhagen. As you can see it is hard to tell what to do from another's preference. I suggest you look at all the stuff to do and make your best pick based on that.

When we flew out of Bergen, we took a short flight to Oslo and connected to another Norwegian Air Shuttle flight non-stop to Orlando. Now, Norwegian Air Shuttle is flying cheap seasonally into Newburgh, NY, an hour north of New York City.
And like was said, Icelandair flies non-stop to Reykjavik/ Keflavik where there are connecting flights to Toronto-Pearson.
We absolutely loved Bergen where the locals are incredibly tall, blonde, beautiful and very sweet personalities. There again, we also love visiting Copenhagen.
The choice probably hinges on whether you prefer to spend time in cities (Copenhagen) or outdoors (Bergen).
And yes, Orono is famous for having all those convenient "o"s for crossword puzzles!
