I don't know what is wrong with Seattle. No one wants to travel very far. They could meet in Edmonds, but that's too far north. They were once thinking of Factoria, but no one from Seattle wanted to cross the lake. Maybe it's just the topography.

The first Panera in Montana will open this year in Kalispell. Perhaps a new group in the Flathead?

I completely enjoy our SF Bay Area meetings and some of us venture up to Sacramento a few times a year for theirs as well.
If you can, keep your meetings to the same time and place every month. There may be some adjustments as you get going, but that should be a goal, in my opinion. And even if it's slow going at first, stick with it as you build interest and attendance.
Sacramento meets at a large Panera where there is counter service only, and it's big enough that it can accommodate the 20+ members it often gets but still have lots of room for other patrons.
For the Bay Area, we meet in a large brew-pub with a patio for nice weather. It has table service only but we try to tip our waiters better since we occupy their tables for 3 or 4 hours. We're up to about 10 regulars and often have more.
