On June 26 we fly SwissAir from Zurich to Dublin arriving 10:15am; our return to US departs 1:00pm on Aer Lingus. Is 2hr 45min enough time to go through Immigration in Terminal 1, walk to Terminal 2, and go through all the U.S. security clearances?

Nonetheless, It is nice to be able to do immigration and customs in Dublin compared to when arriving in the USA. I did it 3 weeks ago flying Dublin to Chicago O'hare.
You just have to keep moving at Dublin airport skipping on the way to your gate offers to sample and buy whiskey and other hard liquor while walking through Duty Free in the morning; there are two security screenings of your carry on bag on the way to the gate : one done by Ireland and then by the USA; plus USA passport control immigration.
Just have all your liquids the way they want them when you have flown before and you will be good to go
