I have a Tuesday flight into Zurich that is scheduled to arrive at 12:45. I would like to catch a train that leaves at 13:43. Is 58 minutes enough to deplane, validate a railpass, and get to the train platform at the Zurich airport?

No problem if you don't have to clear immigration and customs and have only carryon luggage. Otherwise that is a very tight connection.

I won't have to collect baggage, but I will be traveling from London to Zurich on a US passport, so I guess that involves customs ?

I don't fly so I can't answer some of your question but I do wonder what would happen to you if your inbound plane is late?

There are later trains that I could catch to my destination, but I am trying to get an estimated time of arrival for my hotelier, so I'm trying to determine if this 13:43 connection is likely.

Nigel, as a 'non-flyer' how fortunate that you live in the UK. It would be a long slow journey to Europe fom here.
