My wife and I are planning a trip to France in December to see the Christmas market in Strasbourg and then come back to Paris (via Reims for a day). I am looking at travel on the eurail.com site but wonder if there may be a better one to use since we are traveling just in France rather than to more than one country.

Use the French Railways own site and app: www.sncf-connect.com
(Note that when travelling cross border it is still not needed to use Eurail.com. Just use the site of the national railway of one of the countries involved...)
Eurail is not going to give you the best prices nor all the trains available. I also suggest using the national rail sites.
If those three trips are all you are doing a pass will eat you alive.
Do as suggested above.
Definitely use SNCF-Connect. You are dealing with the train line itself and not a third party booking site.
