If I book a flight out of Paris(CDG) heading for Istanbul at 7:30 in the morning what time do I need to be at the aiport. TIA

Probably not later that 5:30 and that's at the check-in desk.....which could be a half hour from the RER station.....which would make you have to leave town probably before the first train does......which would definitely make you have to walk the metro tracks since they won't be running yet. I might be a tad off, but it's darn close.
In answer to you next question. Yes. Shearaton, Ibis, Etap, Formule1 in descending price order and they are all either walkable from lobby to gate or have shuttle that will be running.
